When I set off for my freshmen year of college, I was so excited to leave our small town in Nebraska. I felt sure that adventure and romance was finally coming my way. I just knew I would leave home and find awesomeness. In reality, what I found was a lot of homework and unexpected homesickness. I didn’t expect to miss home so much!
Thankfully, my Aunt Leah and Uncle Mike took pity on me and invited me to stay a weekend at their home, some four hours away. I found a ride and couldn’t wait to be with favorite aunt and uncle. My Aunt Leah is known for her kindness and her delicious cooking, so I knew it was going to be a great weekend.
The first night I got there, my aunt and uncle introduced me to the BBC version of Pride and Prejudice (you know, the six hour version), and microwave caramel popcorn. Sitting on their couch, watching a classic period film, and eating warm, buttery, caramel popcorn, became my new definition of heaven. And to this day, Pride and Prejudice and microwave caramel popcorn are two of my favorite things. While my husband doesn’t love period films like I do (he prefers zombie shows), he does excited when I announce I am making this popcorn. But I must warn you: if you start making this caramel popcorn, people in your life may start bugging you to make it all the time. But that’s not so bad, since you will get to eat it too!
This caramel popcorn couldn’t be easier. I usually pop my own corn in an air popper, but you don’t even need to do that. You can use bagged or microwave popcorn.
While popcorn is popping, combine brown sugar, butter, white Karo syrup, and baking soda, in a microwave safe bowl. Put it in the microwave for 1-2 minutes, until all ingredients are melted and combined.
It will turn into a beautiful caramel mixture. Go ahead and taste it, just to make sure it’s awesome.
Put the popcorn in a paper grocery bag. Pour the caramel on top of the popcorn and give it a few shakes. Open the bag and stir it around if necessary, to make sure every morsel is covered in caramel goodness.
Put the popcorn on parchment or wax paper to cool. Or you can do what I do, eat some while it’s warm and then let the rest cool for later. It’s delicious warm and cool, believe me. You just can’t go wrong with this stuff!
- 1 cup uncooked popcorn kernals (or 24 cups of pocorn)
- 1 1/2 cups brown sugar
- 3/4 cup butter
- 1/3 cup white Karo syrup
- 1 tsp. baking soda
- If using fresh popcorn, pop your kernals in an air popper and let it work it's magic. If you are using microwave or bagged popcorn, know that you will need about 24 cups of popped corn for this recipe.
- In a microwave safe bowl, put in the brown sugar, butter, white Karo syrup, and baking soda. Put in the microwave for 1-2 minutes, stirring once, or until well combined.
- Put the popcorn out on waxed or parchment paper to let cool.
